Who needs a double boiler?

Me, probably.  This is obviously a safety hazard.

  3. I was melting white chocolate for a truffle recipe. It was fine, but I had to do everything so gingerly (as the pie pan kept slipping and sliding) that it took a lot longer than it should have.

  4. Next time you need a double broiler try filling a frying pan with water and then putting the pot in it. I did this when making homemade hollandaise sauce and it worked just fine. My mum gave me the tip.
